The Stewarding Manager plays a crucial role in overseeing the Stewarding operation, ensuring optimal departmental costs and quality sanitation standards are met while maintaining effective relationships within the team.
Responsibilities
- Manages all functions of the Stewarding operation to achieve the optimum departmental costs.
- Manages all functions of the Stewarding operation to achieve the optimum quality level of sanitation.
- Controls and analyzes, on an ongoing basis, the level of the following:
- Costs
- Breakage
- Quality of support provided to other sections
- Condition and cleanliness of facilities and equipment
- Establishes and maintains effective employee and inter-departmental working relationships.
- Conducts such functions as interviewing, hiring, and performance evaluation, coaching, counseling and taking disciplinary actions to ensure the appropriate staff productivity and efficiency.
- Assists the Director, Culinary in developing training plans, develops training material in accordance with Amari guidelines and implements training plans for the Stewarding employees and other Food and Beverage employees.
- Develops and maintains an updated operations manual for the Stewarding section.
- Conducts daily briefings and other meetings as needed to obtain optimal results.
- Participates in Stewarding operation as necessary.
- Assists the Director, Culinary in setting Stewarding goals and developing strategies, procedures and policies.
- Determines the minimum and maximum stocks and controls the par-stocks of all material and equipment.
- Liaise with the Purchasing Manager and suppliers for any purchase needed for the stewarding operation.
- Conducts inventories in coordination with employees of the accounting division.
- Liaise with employees of the Engineering Division to schedule preventive maintenance and repairs.
- Monitors local competitors and compares their operation with his operation.
- Keeps aware of trends, systems, practices and equipment in food and beverage through trade literature, hotel shows and site visits.
- Performs related duties and special projects as assigned.
- Practices H.A.C.C.P. according to Amari Policies and Procedures.
