We are looking for an experienced and commercially driven Director of Food & Beverage to lead and oversee all Food & Beverage operations. The successful candidate will be responsible for driving operational excellence, revenue growth, guest satisfaction, cost control, and team development across all F&B outlets.
This is a leadership role for a passionate hospitality professional who can balance commercial performance, operational standards, food quality, service excellence, and people leadership.
Key Responsibilities
- Lead and manage all Food & Beverage operations, including restaurants, bars, banquets, room service, and other F&B outlets.
- Develop and implement F&B strategies to achieve revenue, profitability, and guest satisfaction targets.
- Monitor and improve F&B revenue, food and beverage costs, labor costs, and overall profitability.
- Prepare and manage the annual F&B budget, forecasts, and business plans.
- Drive menu development, pricing strategies, promotions, and new F&B concepts in line with market trends.
- Ensure consistently high standards of food quality, service, presentation, hygiene, and guest experience.
- Ensure compliance with food safety, hygiene, health & safety, and company standards.
- Monitor guest feedback and implement continuous improvement initiatives.
- Lead, coach, and develop the F&B management team and frontline colleagues.
- Establish clear performance objectives, KPIs, training plans, and succession planning for the department.
- Work closely with Sales & Marketing, Finance, Culinary, Engineering, HR, and other departments to maximize business performance.
- Build strong relationships with suppliers and negotiate effectively to achieve quality and cost objectives.
- Monitor purchasing, inventory, stock control, wastage, and operational expenses.
- Analyze F&B performance reports and identify opportunities to increase revenue and improve profitability.
- Maintain strong brand standards and ensure all outlets deliver a consistent and memorable guest experience.
- Lead F&B projects, renovations, openings, and operational improvements as required.
- Ensure the department is adequately staffed and that colleagues are properly trained and motivated.
- Promote a positive, professional, and performance-driven working culture.
Qualifications
- Bachelor's degree or equivalent qualification in Hospitality Management, Hotel Management, Business Administration, or a related field.
- Minimum 8–10 years of progressive experience in Food & Beverage, with at least 3–5 years in a senior management or Director-level position.
- Strong experience in hotel, resort, luxury hospitality, or high-volume F&B operations.
- Proven track record in revenue generation, budgeting, cost control, and profitability improvement.
- Strong understanding of F&B operations, menu engineering, inventory management, purchasing, and food cost control.
- Excellent knowledge of food safety, hygiene, and health & safety standards.
- Strong leadership, people management, coaching, and team-building skills.
