Job Purpose:
Exhibits outstanding culinary talent by personally performing tasks while leading staff and managing all food related functions.Acts as liaison between all culinary departments including signature restaurants and hotel management. Assists in supervising all kitchen areas to ensure a consistent, high quality product is produced. Areas of responsibility comprise overseeing all food preparation areas including but not limited to breakfast, meetings and events, in room dining, residence dining, lobby lounge, pool area, employee dining room as well as supporting such areas as signature restaurants, purchasing and stewarding. Responsible for guiding and developing staff.Ensures exemplary sanitation and food safety standards are achieved whilst minimizing food wastage.
Duties & Responsibilities:
-Oversees and provides direction for all day-to-day culinary operations
-Provides guidance to team members, including setting performance standards and monitoring performance
-Encourages and builds mutual trust, respect, and cooperation among team members
-Ensures property policies are administered fairly and consistently
-Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met
-Supervises and coordinates activities of cooks and workers engaged in food preparation
-Understands employee positions well enough to perform duties in employees absence or determine appropriate replacements
-Conduct daily and monthly departmental meetings to provide information to team members, obtain their feedback, rectify operation issues and provide a regular forum for departmental communication
-Establishes and maintains open, collaborative relationships with employees and ensures employees do the same within the team
-Solicits employee feedback and reviews employee satisfaction results to identify and address employee problems or concerns
-Interview, select and recruit culinary team members in line with The Standard Hotel's recruiting guidelines
-Identify and develop team members with potential culinary department leadership skills
-Conduct performance reviews
-Ensure all hotel grooming standards are adhered to
-Develop, conduct and maintain records of all staff training programs for team members, focusing on their development needs
-Prepare weekly staff schedules keeping in mind anticipated business, operating budgets and standards of service
-Ensure that the quality, taste and presentation of food prepared is in line with The Standard Hotels production and brand standards
-Demonstrate new cooking techniques and equipment to staff
-Conduct food tasting sessions and guide staff for new menu implementation
-Ensure all products sourced are of the highest quality and adhere to relevant ethical and sustainable procurement requirements
-Ensure that a high level of food safety and hygiene standards are adhered to
-Implement and monitor portion control procedures using standard recipe cards
-Analyses food costs and ensure that expenses and requisitions are in line with budget and forecast
-Maintain control over purchase orders and requisitions
-Monitor inventory turnover and slow-moving items
-Ensure that purchasing, receiving and storage are efficiently handled and that the goods purchased conform to the hotel's and brand's specifications
-Regularly check stores and refrigerators and be responsible for the proper storing and recycling of leftovers
-Ensure smooth and effective communication amongst all kitchens and other departments
-Update menu recipe cards and menu planning for promotions as required
-Foster internal friendships in order to drive teamwork and achieve results
OTHER RESPONSIBILITIES
.Ensure a service-oriented culture focusing on guests needs
.Be well versed in the hotel's fire and life safety emergency procedures
.Apply necessary precautions with regards to the hotel food safety and hygiene standards (HACCP)
.Build strong working relationships with other hotel departments
.Attend all briefings, meetings and trainings as assigned by management
.Attend meetings with senior management to discuss future business strategies and review ongoing action plans and progress
.Maintain the highest standard of personal appearance and cleanliness
.Perform other duties assigned by the management
