Job Description

Job Summary

The Food & Beverage Operations Manager is responsible for the overall operational and financial performance of all F&B outlets within JP Pepperdine Group. This senior leadership role oversees multiple outlets and is accountable for driving operational excellence, service quality, food safety, profitability, manpower optimization, and regulatory compliance.

Working closely with the Senior Management team, the Operations Manager ensures consistent brand standards, successful execution of business initiatives and marketing campaigns, while delivering an exceptional guest experience. The role also plays a key part in developing future leaders, strengthening outlet management capabilities, and fostering a high-performing workforce.

Key Responsibilities

1.Operational Excellence

  • Oversee the day-to-day operations of all assigned outlets to ensure smooth, efficient, and profitable business operations.
  • Establish, implement, and continuously improve Standard Operating Procedures (SOPs) to ensure consistency in service quality, food safety, hygiene, and operational excellence across all outlets.
  • Conduct regular outlet visits, operational audits, and spot checks to ensure compliance with company standards and identify improvement opportunities.
  • Drive continuous improvement initiatives and operational innovation to enhance productivity and business performance.


2. Financial & Business Performance

  • Take ownership of the overall Profit & Loss (P&L) performance across all outlets.
  • Monitor and achieve revenue targets, profitability, food and beverage costs, labour costs, and other controllable operating expenses.
  • Analyse financial and operational reports, identify performance gaps, and implement corrective action plans.
  • Present monthly business performance reports, operational insights, and recommendations to Senior Management.

3. Leadership & People Management

  • Lead, coach, mentor, and develop Outlet Managers, Assistant Managers, and supervisory teams to achieve operational excellence.
  • Conduct regular performance reviews, provide coaching, and establish individual development plans.
  • Identify and develop high-potential employees through succession planning and leadership development initiatives.
  • Foster a positive, accountable, and high-performance working culture across all outlets.


4. Manpower Planning & Human Resource Management

  • Partner closely with the Human Resources team on manpower planning, recruitment, workforce deployment, and succession planning.
  • Optimise manpower utilisation and outlet rostering to improve productivity while maintaining service standards.
  • Oversee employee performance, promotions, disciplinary matters, employee engagement, retention strategies, and payroll-related operational matters.
  • Support staff training and development to ensure continuous improvement of operational competencies.

5. Guest Experience & Brand Standards

  • Ensure all outlets consistently deliver excellent customer service and uphold the Company's brand standards.
  • Monitor customer feedback, online reviews, mystery shopper reports, and customer satisfaction indicators.
  • Lead service recovery efforts, conduct root cause analysis, and implement action plans to improve guest experience and operational performance.


6. Supply Chain & Cost Control

  • Work closely with the Procurement team to improve procurement efficiency and optimise vendor performance.
  • Monitor inventory management, stock accuracy, food wastage, and cost control initiatives across all outlets.
  • Drive continuous improvement in purchasing, inventory management, and operational cost efficiency.

7.Regulatory Compliance & Risk Management

  • Ensure full compliance with all statutory and company requirements, including:
    - Singapore Food Agency (SFA) regulations
    - Ministry of Manpower (MOM) employment regulations
    - Workplace Safety and Health (WSH) requirements
    - Liquor licensing regulations
    - Food safety and hygiene standards
  • Maintain a safe working environment and ensure timely resolution of compliance issues.


8. Business Development & Projects

  • Lead operational readiness for new outlet openings, renovations, relocations, and business expansion projects.
  • Coordinate staffing, training, operational setup, and launch execution.
  • Support new product launches, menu implementations, promotional activities, and marketing campaigns to ensure successful execution.


9. Reporting, Analytics & Continuous Improvement

  • Monitor and analyse key business performance indicators, including:
    - Sales and revenue
    - Average spending per customer
    - Labour productivity
    - Food and beverage costs
    - Customer satisfaction (CSAT/NPS)
    - Inventory variance
    - Safety and compliance incidents
  • Use operational data and business insights to improve decision-making and drive continuous business improvements.
  • Promote sustainability initiatives, including food waste reduction, responsible sourcing, and environmentally responsible operating practices.

Requirements& Qualifications

Education

  • Diploma or Bachelor's Degree in Hospitality Management, Food & Beverage Management, Business Administration, or a related discipline.


Experience

  • Minimum 7 years of progressive experience in the Food & Beverage industry.
  • At least 5 years experience managing multiple F&B outlets in a senior operational leadership role.
  • Proven experience in full-service restaurants or multi-brand restaurant operations will be an advantage.


Knowledge & Skills

  • Strong knowledge of Singapore's SFA food safety regulations, MOM employment legislation, Workplace Safety and Health (WSH) requirements, and liquor licensing regulations.
  • Strong financial and commercial acumen with proven experience managing P&L, budgeting, food costs, labour costs, and operational profitability.
  • Excellent leadership, coaching, people development, and stakeholder management skills.
  • Strong analytical, problem-solving, decision-making, and organisational abilities.
  • Excellent communication and interpersonal skills with the ability to build effective working relationships across all levels.
  • Proficient in Microsoft Office applications, POS systems, inventory management systems, and workforce scheduling software.
  • Comfortable using operational data and business analytics to support strategic decision-making.
