JOB SCOPE
The Junior Sous Chef supports the Sous Chef and Head Chef in daily kitchen operations, ensuring food quality, hygiene standards, and efficient service delivery. This role assists in supervising kitchen staff, food preparation, and maintaining operational discipline in a high-volume airport lounge environment.
JOB RESPONSIBILITIES
1. Kitchen Operations & Food Preparation
- Assist in supervising daily kitchen operations and food production.
- Prepare, cook, and present food according to standard recipes and quality guidelines.
- Ensure timely preparation and replenishment of buffet items.
- Maintain portion control and food consistency.
2. Team Supervision & Support
- Support supervision and guidance of cooks and kitchen helpers during shifts.
- Assist in assigning duties and monitoring staff performance.
- Provide on-the-job training to junior kitchen staff.
- Act as shift-in-charge in the absence of the Sous Chef.
3. Food Safety, Hygiene & Compliance
- Ensure compliance with food safety, hygiene, and sanitation standards.
- Follow HACCP and food handling procedures.
- Maintain cleanliness and safety of kitchen areas and equipment.
- Support audits, inspections, and corrective actions.
4. Inventory & Cost Control
- Assist in stock control, ordering, receiving, and storage of food items.
- Monitor food wastage and report variances.
- Support stock rotation (FIFO) and labeling practices.
- Participate in stock takes as required.
5. Coordination & Reporting
- Work closely with service and F&B teams to ensure smooth operations.
- Report operational issues, equipment problems, or shortages promptly.
- Support menu execution and special events.
JOB REQUIREMENTS
Education & Certification
- Diploma or certificate in Culinary Arts or related field is an advantage.
- Food Safety and Hygiene certification preferred.
Experience
- Minimum 3–5 years of kitchen experience, preferably in hotels, lounges, or catering.
- Experience in a supervisory or senior cook role is an advantage.
Skills & Competencies
- Good culinary skills and kitchen knowledge.
- Ability to lead and support a kitchen team.
- Strong attention to hygiene, quality, and detail.
