Job Description

We're partnering with a leading premium food importer and distributor to find an experienced Master Butcher to join their meat production team.

This role is ideal for a hands-on butcher who not only cuts meat well, but also understands yield, loss control, and quality standards and wants to take ownership of production quality for premium beef and lamb products supplied to top-tier hotels and restaurants.

What You'll Do

  • Perform precision cutting of beef, lamb, and other premium meats (primal & sub-primal cuts) according to company and customer specifications
  • Control and improve yield percentage, monitor loss, and propose improvements to reduce waste
  • Ensure product quality, freshness, and hygiene in line with HACCP / GMP standards
  • Support production planning to meet daily orders and delivery timelines
  • Mentor and train junior butchers on cutting techniques, knife handling, and safety standard

What We're Looking For

  • 3+ years of experience as a professional butcher (factory, meat processing plant, or modern trade butcher section preferred)
  • Strong knowledge of meat anatomy and premium beef/lamb cuts
  • Skilled in using knives, electric saws, and slicing equipment
  • Good understanding of yield calculation, cost control, and waste management
  • Detail-oriented, disciplined, and committed to food safety standards
  • Fluent in Thai (required for daily operations and team communication)
