Oversee and control the production of premium French pastries, bakery such as authentic French croissants, brioche, pain au chocolat, macaron and other viennoiseries.
Maintain the taste, appearance, and quality standards of the pastries with elegance and consistency.
Supervise the lamination, proofing, and baking processes to achieve perfectly layered buttery, and crisp croissants.
Develop new classic and creative menu items based on seasonal ingredients and the concept of the shop.
Ensure strict hygiene, cleanliness, and proper use of kitchen tools and ingredients.
Qualifications :
Minimum 5 years of experience in French pastry and bakery.
Expertise in French viennoiserie, especially in lamination techniques, butter selection, and temperature control.
Experience in premium cafes, patisseries, or five-star hotels is highly preferred.
High attention to detail and dedication to quality in every step of the process.
Strong leadership, hand on and team management skills.
Good command of Thai and English communication skills; knowledge of French is an advantage.
