Job Summary

Fraser Suites Bangkok in Thailand is slated to open in 2026. The Restaurant Manager is responsible for managing all front-of-house operations at Alba, ensuring exceptional guest experiences while maintaining operational efficiency. You oversee the reception, floor service, and bar teams, and work closely with the FnB Director to achieve financial targets and service excellence.

Responsibilities

Core

Floor Service Management

• Oversee all front-of-house service operations during all shifts
• Ensure service standards are consistent and aligned with Alba's training

• Monitor table management and optimize table turns while maintaining guest

• Coordinate with kitchen on service flow and ticket management
• Address guest issues and complaints promptly and professionally
• Conduct regular floor walks during service to monitor quality

Staff Management & Training

• Supervise Reception Manager and Assistant Managers
• Support recruitment and onboarding of floor and bar staff
• Conduct performance reviews and manage staff development
• Provide coaching and feedback on service standards
• Manage staff scheduling in coordination with FnB Director
• Monitor attendance and manage disciplinary procedures

Health, Safety & Compliance

• Ensure compliance with health and safety regulations
• Maintain health and safety documentation and incident reports
• Conduct regular facility inspections
• Implement and monitor cleanliness standards
• Ensure proper handling of food and beverage in service areas
• Maintain sanitation standards in restrooms and public areas

Wine & Beverage Management

• Oversee wine inventory and ordering
• Coordinate with Bar Manager on beverage cost control
• Ensure proper wine service techniques across all service staff
• Monitor beverage sales and variance
• Support wine training and education for staff

Guest Experience & Operations

• Ensure reservation management is accurate and efficient
• Manage SevenRooms system and KPIs
• Monitor guest satisfaction metrics and feedback
• Maintain restaurant appearance and ambient conditions
• Ensure smooth transitions between service periods
• Coordinate with kitchen on timing and service quality

Financial Management

• Monitor labor costs and schedule efficiency
• Track beverage costs and variance from budget
• Support revenue optimization initiatives
• Report operational metrics to F&B Director
• Control supply costs in front-of-house areas

Requirements

• Minimum 1 year of experience as a Restaurant Manager or in a similar restaurant leadership role.
• Proven experience managing a restaurant with at least 80 seating capacity.
• Demonstrated ability to oversee high-volume operations with a large number of daily covers.
• Strong competency in managing front-of-house operations, staffing, customer service, and operational performance.
