French Bakery Solutions makes frozen bakery for retailers, coffee chains, caterers and distributors in Thailand and abroad. We use French baking technique at industrial scale: muffins, brownies, cakes, cookies, macarons, cheesecakes and desserts, plus fillings, dough and batter. We supply 4 of Thailand's top 5 modern trade retailers and export across Asia-Pacific.

About the role

Lead our bakery floor every day with a team of about 50. You turn the production plan into finished products, on time and at the right quality. This is high-volume production, not a hotel or café kitchen: you must have run a high-volume bakery, central kitchen or bakery factory. We want a hands-on leader who keeps high standards and gets the job done.

Key responsibilities

1. Daily production. Turn the plan into daily tasks and team allocation. Deliver the output on time.
2. Team leadership. Lead and coach 3 supervisors and about 50 staff. Build a disciplined, positive team.
3. Quality. Keep every product consistent in taste, texture and look. Find and fix problems fast.
4. Hygiene and food safety. Make sure GHP and HACCP rules are followed on the floor.
5. Training. Train staff on baking techniques, recipes and our standards.
6. Waste and productivity. Reduce waste, rework and overtime.

About you

• 7+ years in bakery or pastry production, including 3+ years leading a team
• Experience in a high-volume bakery, central kitchen or industrial bakery
• Strong cake and pastry skills: batters, cheesecakes, macarons, pies, baking, finishing
• Frozen bakery or blast freezing experience is a plus
• GHP and HACCP in daily practice
• Hands-on, organized and calm under pressure
• Working English (written and spoken). Thai native or fluent preferred.
